Crock Pot Recipes

Do you use a crock pot and have a recipe that you'd like to share? Crock pots are hit and miss with me, mostly miss, I'd love to hear about something tested and tasty!

Here's a crockpot recipe I found that sounds great. Can't vouch for it personally but it sounds great.

Favorite White Chicken Chili Recipe


A delicious chicken chili for the slow cooker, made with chicken, beans, and other ingredients.

Ingredients:
1 lb chicken, cut up into small chunks (I like to use boneless breasts for their "ease" and lower fat content)
1 cup chopped onion
1 can (or the equivalent) chicken broth
2 cloves of garlic, chopped finely
2 tsp Cumin seed (ground will not withstand long cooking as well)
1/2 tsp dried oregano leaves
3 -15oz cans white beans (great northern or cannellini), drained and rinsed
1 or 2 chopped red, green or yellow bell peppers, or combination
jalapeno chili peppers, fresh, jarred or canned, optional or 'to taste' (depending on how much heat you like!)

Preparation:
In a 4 or 6 quart crockery cooker combine the chicken, onions, chicken broth, garlic, cumin and oregano.
Let cook awhile on low (approx. 3-5 hours, depending on your schedule)
Add drained beans.

Now here is the important part if you don't want mushy chili.. Add the bell peppers and jalapeno peppers (if using) no earlier than the last hour or hour and a half before serving.

Top each serving with shredded Monterey jack cheese and or broken tortilla chips if desired.

Mostly I use my crockpot to cook a roast in the winter months. If I have a beef roast that seems to be a little tough, I put a little beef broth in the slow cooker with the beef roast, add an onion cut in chunks, a bit of garlic, salt and pepper. Turn on and leave it on low for 5-6 hours or high for 3-4 hours, depending on the size of the roast. The roast is nice and tender and you can use a little of the juice to make gravy. This way I don't have to worry about being home from work to put a roast in the oven!!
It's great to use for beef chilli and homemade brown beans as well.

I agree with Peter ribs in the slow cooker...not good! Pork Roasts, Chicken, Pot Roast, Turkey, etc, are terrific. Here's one of our favourite recipes:

Orange BBQ Pulled Pork Sandwiches

1/4 c. Marmalade
1 C. BBQ Sauce (Kraft Regular works great)
Pork Roast.

Mix Marmalade and BBQ Sauce Together. Place Pork roast in slow cooker, add sauce mixture. Cover and cook for 8 - 10 hrs on low or 3-4 hrs. on high. Before serving, shred pork roast in slow cooker using 2 forks, stir, cover and let sit in mixture on low for another 10 - 15 mins (or as long as it takes to set the table, get the rolls, etc.) Spread miracle whip or mayo on some nice sub or kaiser rolls and Voilla! Yummy!! We serve our with some baked french fries, sweet potato fries or salad.
